2017 New Year’s Resolution Week: Applesauce Banana Oatmeal Raisin Cookies

C – One of my favorite cookies is an oatmeal raisin cookie.

I have loved oatmeal raisin cookies since I was little. I didn’t know that oatmeal raisin cookies could be so unhealthy. Like many other cookies, oatmeal raisin cookies have lots of butter, sugar and eggs. It’s not the best for you, even though there’s healthy oatmeal in them.

I also thought they were healthy with raisins, when I was growing up. Now, I know that raisins aren’t the healthiest food in the world.

I needed to discover a better and healthier oatmeal raisin cookie. This recipe is a great one. No eggs. No butter. Sugar from fruit and applesauce. This is really healthy. It’s also gluten free.

I was a little reluctant to trying this recipe. Is it really going to work? Will it all come together? It worked and it came together.

The secret is using really ripe bananas. I didn’t have really ripe bananas so I place a couple of large bananas into a oven at 300 degrees until they slightly puff up. Then, I removed the peels and mashed them up. They worked perfectly in this recipe.

These cookies don’t taste like the unhealthy ones. But, they will get your sweet-tooth cravings fulfilled. The cookies aren’t super sweet. They have a strong banana flavor and you can’t really taste the applesauce. The raisins are the key to making this cookie recipe taste good. I used a lot of raisins. It’s really the thing that adds the sweetness to the cookie.

Ingredients
  • 2 cups rolled oats
  • 2 to 3 ripe bananas, peels removed and mashed
  • ⅓ cup applesauce
  • ½ cup raisins
  • ¼ cup almond milk
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • Pinch of salt
  • ⅓ cup toasted walnuts, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. Place all ingredients into a mixing bowl. Mix well.
  3. Scoop one-tablespoon round balls onto a parchment lined baking sheet. Flatten each ball.
  4. Bake for 15 to 20 minutes or until the cookies are golden brown on the edges.
  5. Remove from oven and transfer to a cooling rack.
  6. Serve.
  7. Enjoy!

 

I think these cookies are great. You can eat them all day long … if you like. They are so healthy that they can be eaten during breakfast.
