C – Sometimes eating vegetarian makes me crave bacon.
Not that gross soy/vegetarian bacon either. I want the real stuff. Luckily, I am not going full-on vegetarian. I can splurge once in a while. I will be good to myself, though. So, I will use prosciutto. I guess that’s healthier. It’s thinner.
To balance out my craving, I needed to put something healthy in it. Thank goodness peaches are in season. They are the perfect paring.
I think this peach prosciutto wraps with some basil in the center really tasted great. I couldn’t believe everything blended so well together.
The sweet peaches and prosciutto, with an added freshness of basil, really were delicious.
Really simple to make. Of course, I had to crisp-up the prosciutto and make it a little more like bacon. It was amazing.
Appetizer Week: Peach and Basil Wrapped with Crispy Prosciutto |
- 1 ripe, medium yellow peach, sliced into 16 slices
- 16 slice coppa prosciutto
- 16 basil leaves
- Balsamic-Red Wine Reduction, for drizzling (recipe in link below)
- Place a slice of prosciutto flat on a plate or cutting board.
- Place a basil leaf ⅓ of the way on top of the prosciutto.
- Place a slice of peach on top of the basil leaf.
- Wrap up tightly. Continue with the remain ingredients until done.
- In a saute pan on medium heat, place the wraps on the pan. Cook until crispy on all sides.
- Remove from pan and place on platter.
- Drizzle balsamic reduction overtop of the wraps.
- Serve immediately.
- Enjoy!
