C – I feel deprived.
I haven’t had an avocado smoothie in a while. I love avocados in my smoothies. I just haven’t had any good avocados to use lately. Every time I buy avocados at the grocery store, they are too green and I have to wait until they get ripe.
I always forget about them. I end up waiting too long and they go bad. Unfortunately, avocados aren’t like bananas and the riper the better.
Luckily, this week I found a grocery store that had perfect avocados. I was in heaven. I always have crazy thoughts run through my mind when I see good things like this. How many should I buy? What could I do with them? Is it cheap?
I wanted to put a lot in the cart. Of course, they were affordable. I don’t know what I am going to do with them. I’m sure I will come up with something. Yup, I bought a lot. You might have guessed it, it’s avocado week!
First off, something simple. I have a fear that I won’t come up with any recipes or uses for these avocados. I might just have smoothies all week long. But, I won’t. I promise.
Avocado Week: Avocado Ginger Smoothie |
- 1 avocado
- 1 cup apple juice
- ½ lemon, juiced
- ½ cup dates, soaked overnight if not soft
- 1 ripe banana, peeled
- 1 thumb-size piece of ginger, grated
- 2 kale leaves, stems removed
- 1 cup ice
- Place everything into a blender and blend until smooth.
- Serve.
- Enjoy!
This avocado ginger smoothie was a great start to avocado week. Sweet dates, banana and apple juice with creamy, perfectly ripe avocados. I loved the hint of ginger. It adds a spicy kick in the end. I really couldn’t taste the lemon juice. It’s really just to keep the avocado from turning brown.
This avocado smoothie is a really great start to the week. Can’t wait to see what I come up with next.
