C – Thumbprints are probably one of our most popular pins on Pinterest.
I am so surprised that so many people like the picture of the lemon thumbprints we made a few years ago. They are so simple to make.
Since we made grapefruit curd yesterday, I thought it would be a good idea to make more thumbprints.
I wanted to avoid just eating the grapefruit curd right out of the jar. It’s too good.
I love making these. But, they can be a bit addicting.
It’s funny that they get more addicting after a few days.
At first, the cookies are a bit crispy. After a day or two, they get tender and soft. The grapefruit curd is still gooey. But, the top is not so sticky.
I really enjoyed these cookies. I had to control myself from eating all of them.
They aren’t too sweet. A perfect sized cookie to fit in you mouth.
Grapefruit Week: Grapefruit Thumbprints |
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large egg yolks
- 1 Tbsp grated grapefruit zest
- 1 Tbsp fresh grapefruit juice
- ½ tsp kosher salt
- 2½ cup all-purpose flour
- 1 cup Grapefruit Curd, recipe link below or store-bought lemon curd works, too
- Heat oven to 350 degrees.
- Line two half-sheet-pan baking sheets with parchment or nonstick liners.
- Beat butter and sugar in a large bowl with mixer until well blended.
- Beat in yolks, grapefruit zest, grapefruit juice, and salt.
- Beat in flour just until moist clumps form. Gather dough together in bowl to bind.
- Shape scant tablespoons of dough into 1-inch balls.
- Place balls on prepared sheets, spacing them 1 inch apart.
- Using a floured finger or something that will give a good round shape (I used the back of a small pestle), make a deep indentation in center of each ball.
- Bake cookies until firm and lightly golden on bottom, about 18 to 20 minutes.
- Remove cookies from oven and immediately fill indentations with curd.
- Return to oven and bake 2 minutes longer to set curd.
- Bake remaining cookies. Lightly dust edges with confectioners’ sugar before serving.
- Serve.
