J – I am a super fan of BLT-anything sandwiches …
Regular BLT, Avocado BLAT and Salmon BLT, of course. But, this one takes it to a whole new level. Something about the fried green tomatoes pushes the deliciousness meter a whole bunch.
We served them to our client for a lunch meeting. The meeting went really well.
Fried green tomatoes arrived in the Be Mindful. Be Human. kitchen via Luke when we first started doing Southern recipes. Then, we sort of forgot about them.
Not sure why. Maybe, because our tomato crop is so darned uncertain each year. And, we hate to buy tomatoes at the store.
Green Tomato Week: Bacon Lettuce Fried Green Tomato (BLFGT) Sandwich |
- 2 Ciabatta buns or bread, cut horizontally, toasted
- 6 slices bacon, cooked crispy
- 4 lettuce leaves or arugula
- 4 fried green tomato slices (recipe link below)
- Sriracha mayonnaise
- Place toasted bread cut side up.
- Spread Sriracha mayonnaise over both sides.
- Place bacon on top of the bottom piece of the bread.
- Place fried green tomatoes on top of the bacon.
- Drizzle more Sriracha mayonnaise over top of the green tomatoes.
- Top with lettuce leave or arugula.
- Place the top half of the bread on top.
- Serve.
- Enjoy!
