Grill Week: Grilled Pineapple Skewers with Sweet Mint Lime Sauce

C – Grill week means grilling everything!

… except peaches. But only because we grilled way too many peaches and nectarines last year. I loved them the first and second time. But, after five times, I was sick of it. I even requested not to do any grilled fruit for grill week … then I changed my mind when I saw this gorgeous pineapple on sale at the grocery store.

I had to get it and grill it. It was perfectly ripe, so I didn’t have to wait.

Jim is definitely the grill master and he understands where things need to be on the grill. These pineapple skewers needed to have a good char on them and that was about it. Super hot is the way to go when grilling things when you need just the grill marks.

One of the most challenging things about grilling with charcoal is getting to the perfect moment when the grill is ready. If you’re not ready, then grill marks might not happen the way you expect it. This is why standing over a grill and hanging out with your friends with a beer or drink is a great idea.

I wasn’t ready. I was doing too many things all at one time. When the grill was done heating up, I wasn’t standing there at the ready. Result was uneven cooking for the pineapples. Some grilled a little more than others. Oh well. They were still delicious.

Grill Week: Grilled Pineapple Skewers with Sweet Mint Lime Sauce

Serves: 2 to 4
Ingredients
  • 1 pineapple, peeled, cored and cut into wedges
  • Fourteen 5-inch skewers, soaked in warm water before using
  • ½ cup water
  • ½ cup granulated sugar
  • A pinch of salt
  • 5 mint leaves, chiffonade
  • 1 lime, juiced
Instructions
  1. Skewer 3 to 4 pieces of pineapple onto each stick.
  2. Place water, salt and sugar into a small sauce pan. Bring to a simmer. Let simmer for 10 minutes.
  3. Remove from heat and let cool to room temperature. If in a rush, place in an ice bath to drop the temperature.
  4. Add mint leaves and lime. Mix well and adjust to taste if needed.
  5. Place skewers on a high heat grill.
  6. Brush on the sauce once or twice on each side. Cook until nicely charred on both sides. About 5 minutes on each side.
  7. Serve with more of the sweet lime mint sauce.
  8. Enjoy!

 

There’s nothing better than nature’s candy, warmed up a little with the addition of sweet lime mint sauce. The flavor combination is so wonderful. After a heavy meal, it’s a light refreshing fruit dessert.

It’s a must try.
