Summer Dinner Party Week: Grilled Lamb Loin With Nectarines

Update and Redux: J – This dish has three of my all-time-favorite ingredients: fresh lamb, grilled nectarines and goat cheese. It is one of those “Oh, my!” Summer dinner party recipes. Delicious, beautiful and so easy. Of course, guests love the presentation and the amazing flavors.

C – What a difference grilling makes!

I finally persuaded Jim to get a grill. He wants this expensive one … someday. But, we are renting the Be Mindful. Be Human. house. It wouldn’t be wise to invest a few thousand dollars on a built-in gas grill, only to move in a year.

We bought a much cheaper grill. It works just fine. I am happy. I think Jim is, too. He missed grilling.

Grilled lamb is so quick and very tasty done on a charcoal grill. I didn’t know grilling stone fruit would be so tasty, also. I have never done it before.

Grilling stone fruit can be a bit of a challenge. You have to be careful not to place really ripe fruit on there. It can get a bit messy. They can turn to mush or, even worse, burn quickly because of all the sugar in the fruit.

I was happy I bought nectarines to try grilling. They were nice and sweet. But, they weren’t soft to the touch. They really grilled perfectly. They stuck a bit to the grill. Luke kept on moving them so they wouldn’t stay stuck for too long. Of course, oil the grates lightly with a high-temperature oil like Canola before placing the nectarines. It really helps.

Lamb Loins with Grilled Nectarine, Honey and Goat Cheese

Ingredients
  • 2 lamb loins
  • Salt and pepper to taste
  • 2 nectarines, ripe but still a bit hard, cut into halves, pitted
  • 1 tsp honey, more if desired
  • 1 Tbsp goat cheese, more if desired
Instructions
  1. Salt and pepper lamb.
  2. Place on a hot grill. Cook until medium rare. About 115 degrees.
  3. Remove and let rest.
  4. While grilling the lamb. Place nectarines cut side down and grill until sear marks appear. Move the nectarines carefully so the don’t break. Flip them over and move to cooler side of the grill. Place cover on grill with a little opening to keep it vented.
  5. Once nectarines are slightly softened, remove from grill.
  6. Slice nectarines into wedges.
  7. Pour honey over while warm. Stir gently to make sure honey melts.
  8. Place nectarines on plates.
  9. Sprinkle bits of goat cheese over the nectarines.
  10. Top with loins.
  11. Serve.
  12. Enjoy!

 

Grilling really helped to release more of the sugar. I was amazed at how the flavor profile changed in these nectarines. After slicing, we added some honey to balance out the sharp goat cheese. This was an amazing dish. I loved it!
