C – Sometimes I get overwhelmed feeding a crowd.
Especially, if it’s last minute. Luckily, this isn’t the case for this year’s Super football party. If I were overwhelmed, this is what I would do. Raid the freezer! Especially, the Be Mindful. Be Human. freezer. There are all sorts of goodies in there. Like the mini meatballs we were saving for some special occasion.
Hmmm … maybe a Super football party.
Put some bread with it. Top the meatballs with some of that great tomato sauce we make. That’s also from the freezer. Add caramelized onions. Top it with cheese, melted in the broiler. Then, add some arugula. Hoagie sandwiches for all. Easy!
Your guests will be amazed at the wonderful flavors. Those meatballs have three different types of meat in them, plus some finely ground prosciutto and Parmesan cheese. They taste amazing. You might not have enough for all your guests.
The meatballs topped with that great tomato sauce is a flavor explosion. Add some melted cheese with a really nice airy, crispy bread. It really can be addicting. Of course, add some arugula so your guests can feel like they are getting their serving of vegetables for the day. Its a full on meal with all the major food groups.
Hope your guests will enjoy these hoagies. Make sure you serve them right away. You want crispy bread and melty cheese for your hoagies. They aren’t that great cold. This might be too complicated for me for the party I am attending.
I would have to make them in small batches and serve them right away. Not everyone will want to eat them when I serve them. They have a house rule of no eating in the living room. Only eating in the kitchen.
Super Football Party Week: Mini Meatball Hoagies |
- 36 meatballs (recipe link below)
- Butter for toasting the bread
- Canola oil for toasting the bread
- 6 hoagie rolls, butterfly bread lengthwise and cut in half width wise
- 1 onion, sliced thinly
- 2 cups homemade tomato sauce, blended in a food processor (recipe link below)
- 1 pound mozzarella cheese, shredded
- 6oz baby arugula
- Preheat oven to 375 degrees
- Place oil into a large saute pan. Heat on medium. Add onions and cook until caramelized. About 15 minutes. Set a side.
- Reheat meatballs on the stove top. Remove from heat and cut them in half.
- Reheat the blended tomato sauce on the stove top.
- Place 1 tablespoon of butter and 1 tablespoon of oil in a large saute pan heated on medium high until melted. Add open-face hoagie breads cut side down. Toast for about 1 minute until golden.
- Flip over for a few seconds. Then, remove from pan.
- Top the bottom part of each half bread with 6 meatball halves.
- Top meatballs with tomato sauce and cheese.
- Top other half of the hoagie with caramelized onions .
- Place in pan, face up, and into the oven until cheese is melted. About 2 to 3 minutes. Be careful not to burn the bread.
- Remove the hoagies from the oven and top with arugula.
- Serve immediately.
- Enjoy!
