Sweet Potato Fries

C — Me and french fries go back a long way.

It’s been a love affair that has gone on since I was two. Good and bad fries have come and gone. But, sadly, McDonald’s fries will always have a place in my heart. Here’s why.

It all started when my mom would take me out to McDonald’s for a treat. I was about two years old. We didn’t have a lot of money growing up, so going to McDonald’s was really special. Mom would always feed me french fries while she enjoyed a Big Mac. It was the cheapest things there.

One day Big Macs were on sale, 2 for $4.00. My mom decided to splurge and get me one too. She felt bad that she was eating the good stuff while feeding me the cheap stuff. So she ordered two Big Macs but no french fries, since it would be too much to spend. When the meal came my mom placed the burger in front of me… I didn’t like it. I wanted french fries. Sadly, I didn’t know what to call french fries and thought they were called Big Macs. All I knew was Big Mac.

I screamed and cried, “ I want Big Mac! I want Big Mac!” My mom was clueless and said, “This is a Big Mac!” I screamed, “No, I want Big Mac!” This went on for a while.

Thank goodness my mother is a very smart woman. She put the clues together and figured out that I wanted french fries. A dollar later, I was happy and my mother was happy too. There goes trying to save a buck mom!

To this day, I have not lived it down. Every time we go to McDonald’s and eat without getting fries, my mother will tell us this story. Sadly, my brothers call me “French Fry Girl.” Not quite the super hero name I wanted to be to them. But, it’s still a good memory my mother and I will share forever.

So, these aren’t McDonald’s french fries. These are fries I can actually eat and digest now. Sweet potato fries. Sweet, salty, simple and oh so good.

Sweet Potato Fries

Ingredients
  • 2 large sweet potatoes, peeled and sliced thinly into fries
  • 5 cups grapeseed oil or another high-heat oil
  • Salt and pepper to taste
Instructions
  1. Heat oil in a deep pot. Rinse potatoes thoroughly. Place all sweet potatoes on paper towels to dry.
  2. When temperature has reached 350 degrees. Place a thin layer of sweet potatoes into pot.
  3. Once golden brown and crispy, remove from pot and strain on paper towels.
  4. Sprinkle with salt and pepper
  5. Let cool and serve.
  6. Enjoy!
