C – The next time I have house guests, I am serving tapas.
I love the idea of making things fast and simple, yet flavorful and impressive. I am so amazed at how much we accomplished in a few hours this week here in the Be Mindful. Be Human. kitchen.
These stuffed Peppadew peppers were probably the simplest out of all of them.
Get pickled peppers, goat cheese and herbs from you local grocery store. Combine the herbs and goat cheese. Put it inside the peppers. Fast tapas plate. Really addicting and simple.
Tapas Week: Goat Cheese Stuffed Peppadew Peppers |
- 10 peppadew peppers, various sizes
- 8oz package of goat cheese
- 2 sprigs of lime thyme, minced finely (if you can’t find lime thyme, use regular thyme and a little bit of lemon zest)
- 1 Tbsp heavy cream (more if needed to thin out)
- Salt and pepper to taste
- In a small mixing bowl, mix goat cheese, thyme, salt and pepper. (If it’s too thick, add cream to thin it out. Make sure to add just a small amount at a time since you don’t want to make it too thin.)
- Place filling in a piping bag.
- Pipe filling into each pepper.
- Serve.
- Enjoy!
I couldn’t believe how impressed I was at the flavors. The creamy goat cheese filled my mouth. Sweet, spicy, crunchy peppers that were incredibly juicy came along with it. It was an amazing combination of flavors. Every bite my eyes widened with delight.
You have to try making these for your next party. They were amazing.
